Feeding my soul

I was reminded today that it's important to feed your soul.  I follow Karenika's blog and she always has wonderful words or encouragement.  Her post this week called  Structure, Willpower, Stress  got me thinking about my schedule and how I want to spend my extra time in the day.

I created months ago this white board using my Storybook Creater Plus software from Creative Memories.  I love digital scrap booking and how this product lets me create not only scrapbook pages but many more creative gifts, cards, you name it you can create it.

Well the white board has been sitting in my studio waiting to be written on.  So I decided I would make a list of 5 things that I would like to accomplish each week to feed my soul.

Here's my list to start with and  if I find that any of these items don't feed my soul I can change them.

The cook isn't slackin....

Just realized that I haven't posted my weekly meal plans since end of January.  It's amazing where the weeks go.  Well the cook hasn't been slacking because the family won't let her.  Turns out that the last few weeks cook decided she needed to focus a little on her waist line, so I re-signed with Jenny Craig and already lost 5 lbs.  Woo Hoo!

So since I don't get to enjoy my meals prepared for the family, I have decided it was time for some repeats of weeks past. My Sunday's are still spent planning and preparing, but no new recipes to share with you.

This week I decided to change it up a bit, with me going out of town on them for 4 days, I needed to make sure they were well fed and happy.  My hubs and daughter will be happy campers, because I made lots of Italian. My Sonny on the other hand will not be so happy!  He's got the Irish gene and loves his meat and potato!

So here's what's on the menu this week..

Monday - Stuffed Pesto & Sun dried tomato Parmesan crusted Chicken Breast
I made this one up.  I had a jar of Pesto and sun dried tomatoes that needed to be used, so I mixed it in some ricotta and stuffed the Chicken breast.  Then rolled the best in Panko and fresh Parmesan cheese.

Tuesday - Pasta Puttanesca
I just took a simple Puttanesca recipe from a previous week and will cook up some pasta to add to it.

Wednesday - Rigatoni with Spinach and Sausage
I got this recipe from my Pamper chef meals in 29 minute book. It called for Orecchiette but I could not find so substitute Rigatoni.

Thursday - Chicken and Roasted Garlic Lasagna from For the Love of Cooking blog.


Friday - Sorry family, your on your own!  Mom is out playing with her creative friends.

Ticker Tape Rainbow Quilt

For Christmas my quilting buddy gave me a book called "Color Mastery: 10 Principles for Creating Stunning Quilts".  While reading some of my favorite blogs, I came upon this project that Maureen Cracknell was making that she talked about on her blog.  I immediately was inspired and knew this would be the perfect project to play with all the colors of the color wheel and practice the art of color.  So I sent a text message to my quilting buddy to join me and by the end of the day we had our Kona fabric ordered and in the mail.

Don't you just love all the vivid colors!

A week later we were cutting and assembling all the colorful rainbow of blocks.  I love digging through my scraps and closet full of fabric stashes to find the perfect pieces to fit into my block creating a beautiful mosaic collage.

Know I have to go do the dishes because instead of cleaning up after dinner, I went into my room to finish up this block.  I couldn't stop thinking about it all day today. I had placed all the pieces this weekend and didn't have time to sew them down. 

Tomorrow I get to start playing with another color, wonder what color I should choose, they are all so beautiful!

Be My Valentine Dinner Crop

In the spirit of Valentine's day, I wanted to share with you a "Be My Valentine Dinner crop" I hosted for some scrap booking friends this month.


You see they love my cooking and decorating, so every year they put all their raffle tickets into the Chinese raffle at our Annual National Scrapbook Day event for a chance to have me cook and create a memorable evening with friends.

It wasn't easy pulling of the event this year, as I was in a funk since my Birthday the week prior and was not preparing in advance as my usual self would do.  Yeah, I had ideas that I saw on other blogs and magazines but procrastinated to get ready for the big day.  Until about 11pm the night before, I went out onto Pinterest and search valentine and thank heaven for little miracles.  The ideas poured in and by morning, I was running around preparing, cooking and setting up.  (Even managed to sneak away for the Smash club at the local scrapbook store in the afternoon Heeee!)

The table -
Rain prevented us from eating under the stars, but we made due under my patio.

Their place setting and gift.
Made place mats shaped as hearts using napkins.
Painted a 97cent frame found at Walmart and printed a valentine saying off the internet.

Dessert - Raspberry Brownie Fudge Truffle

Amazing what you can pull off in just a few hours with ideas off the internet!
