Weekly Menu Planning



Summer is over and it's time to get back in the kitchen to prepare my family weekly meals. I only have one child left in school and activities, so you think it would get a little easier. NOT! My dancer has dance Monday thru Friday this year. So that means dinner needs to be ready when she gets home from school so she can eat and be back out the door with a full tummy.



The family is happy I am cooking new stuff again, they get bored and complain when I just throw some chicken, pork or steak on the grill , open up a can of corn and make a packaged pasta or rice.



Boy, did I ever spoil them!!!!



Lucky I enjoy cooking and only wish I didn't have to do it all in one day. Working full time doesn't leave me much time or energy during the work week, so cooking my weekly meals on Sunday guarantees everyone is eating healthy and are happy.



I needed some new recipes so I search for some cooking blogs and found For The Love of Cooking. OMG, she had lots of easy meals and the pictures well lets just say, I was sold. So this weeks menu mostly comes from Pam over at For the Love of Cooking.



Here what were eating this week...


Monday - My homemade Eggplant Lasagna with Bolognese and fresh basil infused bechamel sauce and lots of cheese.



This is my Fresh basil infused Bechamel sauce. This is a key ingredient to my Lasagna, it replaces the Ricotta making for a richer, taster and not as heavy dish.




Tuesday - Pork Loin with apples and Stuffing thanks to Kraft Magazine.


Wednesday - Baked Tilapia with Zucchini, Tomato, Dill and Feta thanks to "For the love of cooking".

Thursday - Mediterranean Chicken Breast with Mediterranean Orzo Salad with Grill Veggies thanks to "For the love of cooking".



Friday - This is the day that I like to say "Mom's had a busy week and ready to relax, I am taking the night off" so it's $4.99 Pizza night with salad.

3 Hearts Art Journal

Last week I started another online class offered by Christy Tomlinson called She had Three Hearts workshop. I spent most of last week watching week 1 which consisted of 28 videos that introduced me to a wide variety of art mediums and techniques to use in my journal. We talked about the heart we share with the world. It's funny until I watch the video I was not sure what the meaning of the three hearts was. It is so true that we so often share and act differently at different places of our lives.





I chose to do my first page with Pan pastels. I like the fact that you can create the page with no water and minimal mess. I used the only 3 colors I have and used a heart template that I had laying around as well as a Bird overlay to create the shapes.




My page has the 3 hearts that I am going to explore in my journal. I cut out from a magazine the words Family, Friends(world) and wrote our self in the 3 hearts to represent my 3 hearts. I also cut out of a magazine the saying PERFECTLY BALANCED BLISS and HARMONY. I felt that these words truly expressed how I hope my three hearts fit into my life and provide me with a life full of love and joy.




Ready to start week 2 video and can't wait to work on some more journal pages. Waiting for another package in the mail of some more pan pastels and other mediums that I am looking forward to trying out. They should be here this week.
