The search for quilt stores

Work as taken me away from my family this week and after my work day, I have had the time to explore St Louis. First thing on my list is the use my iPhone and search out quilt stores. Last night I go so lucky, because it was after 5pm and I was walking to a restaurant to have dinner and what was next door, to the restuarant but a Quilt store still open. My luck, because every store I had passed on this little villiage street was closed, except one!!!!!!

I was so excited, so of course, some fabric just happened to follow me out! Can't wait to go home pick up my machine at the store (having it serviced while I am away) and get back to quilting.

What's cookin this week?

Lately, I have been struggling to find a recipe that included veggies with an Italian taste. You see we love Italian food, but can't live on Pasta alone.



Besides, for me lately the scale just climbs if I eat pasta everyday. It is not easy, because I am in love with pasta and struggle to give it up. So what can I make that contains red sauce so If I can't have the pasta, I can at least still enjoy the red sauce.


Bingo.... The perfect dish was discovered in my search.












Provencal-Style Stuffed Zucchini

Ingredients8 small zucchini (about 7-inches long and 1 1/4 to 1/2-inch wide)
Kosher salt
For the filling:
2 1/2 tablespoons extra-virgin olive oil, divided
6 ounces fresh sausage, such as lamb or mild pork sausage
1/2 cup minced onion
Freshly ground black pepper
1/2 cup finely chopped peeled and seeded tomatoes
1 tablespoon minced garlic
1 tablespoon freshly chopped basil leaves
1 teaspoon freshly chopped thyme leaves
1/4 cup fine dry bread crumbs, divided
1/4 cup grated Gruyere
1/4 cup finely grated Parmesan

DirectionsLay the zucchini down on a flat work surface and, using a sharp knife, cut the top 1/4 of each squash off lengthwise. Using a small melon baller or paring knife, remove the inner flesh from the zucchini to form a small boat shape, leaving a shell on the sides and bottom approximately 1/4-inch thick. Cut the trimmings into 1/4-inch dice and reserve separately. Lightly salt the inside of each zucchini and set aside, cut sides down, on paper towels to drain while you prepare the filling.
For the filling:
In a large skillet, heat 1 tablespoon of the olive oil and, when hot, add the sausage and saute until golden, using a spoon to break it into small pieces, about 6 minutes. Add the onion and cook until soft, 3 to 4 minutes. Add the chopped zucchini and season lightly with salt and pepper and cook, stirring, until squash is soft and lightly caramelized, about 5 minutes. Add the tomatoes and garlic and cook, stirring, for 2 minutes. Add the basil, thyme, and 2 1/2 tablespoons of the bread crumbs. Season, to taste, with additional salt and pepper, if necessary, and set aside to cool.
Preheat the oven to 350 degrees F and lightly grease a baking dish with 1/2 tablespoon of the remaining olive oil.
Pat the insides of the zucchini with paper towels and rub the outsides of the zucchini with the remaining olive oil. Spoon the mostly cooled filling into the zucchini. Sprinkle with the cheeses, then top with the remaining bread crumbs. Bake for 30 minutes, or until golden brown and crispy on top.



Note: I placed over a bed of pasta for those in my family that still get to enjoy pasta and not gain weight!

Struggling to come back....

Finally after over a week, I have made it back to my blog. I was hit hard over a week ago last Sunday, by the news of a friend who passed unexpectively from Breast Cancer. Here I was posting the winner of my Gratitude Journal and at the same time, my husband sitting across from me, breaking me the news.

To say the least I was in shock, and still some days still can't seem to hold back some tears for her and her precious little girls she left behind with their dad. Events like this really make you internalize your own situation and think about what your family would do if you were to pass.

These past days, I have been really focusing on my family and making sure that I don't gripe when they ask me for homework help, or even to tuck them in when they come home late from a night out. In the past, I would sigh, and state "I am already in bed and I have to walk across the house to tuck you in?" Reality check: What was I thinking,I could be gone tomorrow!!!!

I have been making the time to really listen and be there now for them!!! Because they are whats important in my life.

So work and play will just have to take a second seat!

So I am grateful for every day that I get to wake up, spend time with my family, and tuck them into their beds at night with a good night kiss. I could do this everyday to eternity!!!!

You know growing up with 2 sisters was sometimes very trying, as we were all very different. So even though I sometimes wished I was the only child, I am so very grateful, God didn't listen to me and that I was blessed with not 1 but 2 sisters. As we moved out and starting building our families, did I realize that sisters are for life and that I am so grateful to have them for life. They know me and I know them, and we hold a special bond, memories that allow us to stay connected even from afar.
I encouraged, my sister to start her blog, because she was always good at words, in fact I admired how wonderful she could write. I was not a writer or a girl with the ability to express feelings, as she was. When I found blogging about a year ago, I was so inspired by all the wonderful people I met, that I decided to give it a try. Can I tell you that I just love blogging and the wonderful friends around the world that I have found.
Blogging has aloud me to reach across the globe and find women that have great talents and lives and I am grateful that they share those talents for all to enjoy and be inspired by.
So grateful I am for my family, friends and inspiring women who keep me inspired!

A new love for Applique

Sorry, I have been quite the last couple of days but I have been on a mission to complete my current quilt project.

You see I have a passion for applique. Every time I see a applique quilt, I want to make one too. I loved doing the pieces by hand using freeze paper, but often my small pieces just didn't cut it.
On March 25th, I mentioned that I was taking a class with Kim Diehl to learn how to do invisible machine applique. Talk about easy, it's been about three weeks later and I have completed the entire applique center and added the border blocks. All I have left to do it quilt.

I am so happy with the way it has turned out so far.






Now tomorrow it's a trip to the quilt store to pick up the back fabric, so I can quilt and enjoy my quilt.
